I think it's been highlighted more because Covid showed two things: 1) how much money people could save by eating at home and 2) how fragile the restaurant business is and how they cannot survive any period of time when business conditions aren't optimal. Unfortunately the reality of that would leave us with nothing but fast casual because it's cheap and then super high-end restaurants because rich people can pay whatever. But it kind of just doesn't make a ton of sense that you're paying like $40 for a salad, entree, glass of wine and a tip and the restaurant is barely surviving on that.

Of course you pay for the experience, you pay to eat something you're not willing or capable of cooking yourself and all that. Even at a mid-tier restaurants, customers pay like 4x the cost of what it would cost them to make a similar meal at home. On the other side, it just makes very little sense for customers to eat out all that often. The owners work really hard just to keep from failing, and only the super successful restaurants make decent margins.

I think the pandemic has really shed light on the fact that the restaurant business really doesn't make a ton of sense either for the operators or the customers.
